Collection: The wisdom of circulation in delicious food

Non-standard ingredients, vegetable and fruit peels and seeds that have previously been discarded during the production and cooking process. By "drying" these materials, completely new flavors and textures can be created -- this possibility is now attracting the attention of chefs around the world. We have selected delicious sauces, seasonings, furikake (seasonings) and other items that have been created or discovered in the spirit of Zero Waste Kyoto.

The " FURIKAKE Project " was born from this idea and was launched in the summer of 2024 at Zero Waste Kyoto's "tasting kitchen," where chefs and staff from the UK, Italy, and Japan came together and made numerous prototypes. Using seasonal ingredients that change with the seasons, we hope you will give it a try by sprinkling a bit of FURIKAKE on your everyday cooking, soups, salads, desserts, and drinks.
