Macambo White Cocoa Nuts grown in the Chacra region of the Amazon
Macambo (Theobroma bicolor), also known as white cacao or jaggery cacao, is a relative of the cacao tree. It is a delicate white bean that, when roasted, has a crisp texture and a clean, nutty flavor.
Although it is now rarely cultivated commercially, it is traditionally grown on Chacra farms in the Amazon region of Ecuador and is an important food ingredient for the Quichua people.
The makambo acts as a shade tree for the cacao, and its fallen leaves act as natural organic fertilizer, helping to cultivate the cacao. The makambo's new source of income is linked to sustainable values such as increased income for the Quichwa people, biodiversity conservation, and rainforest preservation.

It has a mild, nutty flavor and sweetness reminiscent of cashews, almonds, and edamame, with subtle hints of melon and butter.
