Authentic balsamic vinegar made in Modena, Italy

This mild-flavored white balsamic vinegar adds flavor to your food without compromising color. It's perfect for dressings and marinades.

Balsamic vinegar has a long history. It is mentioned in documents dating back over 1,000 years. It was so valuable that it was even included in dowries. White balsamic vinegar is a relatively new product, and in contrast to traditional balsamic vinegar, it is made without cooking the grapes.

This white balsamic vinegar is produced by Mussini, a renowned vinegar store in Modena (established in 1909). Trebbiano grapes are hand-picked when ripe and at their peak sugar and acidity. The grapes are pressed slowly and meticulously to produce a high-quality grape must. The must is boiled down by about half (36-48 hours), and the next day it is combined with aged white wine vinegar.

Suitable dishes: sauces and dressings for grilled vegetables, chicken, and fish dishes. Grape variety: Trebbiano (white grapes give the vinegar its white color).
Grape harvest: September-October, when the sugar and acidity levels are at their peak.
Process (Growing - Picking - Production - Bottling): Mussini gets its grapes from certified suppliers. Production and bottling are done in-house.
Manufacturing method: Travasi
Aging time: 4 years. Taste: Harmonious sweetness and acidity. Ingredients: White wine vinegar, white grape must. Antioxidant: Sulfite. Acidity: 5.5%.
Oils that go well with this dish: Chili Pepper♥, Koroneiki, Rio Largo, Basil, Tuscan Herbs, Provençal Herbs, White Truffle, Lemon

[How to store white balsamic vinegar]
White balsamic vinegar is sensitive to temperature changes, and whitish, jellyfish-like floating particles may appear in the vinegar.
This is because acetic acid bacteria, which are present in the air, enter the vinegar, multiply, and produce a white substance called cellulose (a type of polysaccharide).
Please rest assured that these acetic acid bacteria and cellulose are harmless to the human body.
If this bothers you, please strain the tea using a tea strainer before using.

We also recommend storing it in the refrigerator after opening.
