Jam made by a chef who learned jam-making techniques at Maison Ferber in Alsace, France.
The seeds are removed by hand on the same day they are picked and then mixed with honey from Japanese honeybees.
Honey has antioxidant properties, and bees are needed to pollinate cherries.
Japanese honeybees are vulnerable to neonicotinoid pesticides, so this shows that the farmers are practicing environmentally friendly farming practices.
The lemons are also sourced from environmentally friendly farmers in Ehime.
The cherries are boiled carefully so as not to crush them.
